Black Oyster

Pleurotus ostreatus var.

This is a special rare mushroom hybrid of the blue oyster and king trumpet! Also known as black pearl or shimofuri (“marbling” in Japanese). The combo gives this guy a firmer texture than the blues but a more mild and sweet flavor than the kings.

Pair this oyster with poultry, beef, fish if you eat meat or showcase the fungi with thyme, parsley, or cilantro and potato, peas, eggplant for a veggie meal.

Of course the black oyster is full of antioxidants and beta-glucans helping support cholesterol, blood sugar and the immune system.
