Blue Oyster Mushroom

Did you know there are over 40 varieties of Pleurotus ostreatus and they are ALL edible?! If you have seen some white mushrooms growing up a tree, then they might have been the Pearl Oyster, the “parent” variety to the Blue Oyster.

This beautiful mush is vibrantly blue in the colder months and tends to turn grey as it matures in the warmer months. It has a lovely soft, meaty texture with a salty, woody taste. Try this versatile fungi in soups, pastas, stir-fries, make a cream sauce with them, or crisp them up and use them to top your salads.

Blue oysters have been studied and extracts are now used as a medicine for cancer, diabetes, and treating infections.
