Pioppino

Latin name: Agrocybe aegerita

This Italian mushroom (pronounced pee-oh-pee-no) is also known as black poplar mushroom, named for the trees it likes to grow under. Growing in velvety, brown capped clusters, the pioppino keeps it shape when cooked and has a lovely crunchy texture.

Would you believe me if I told you this mushroom has anti-fungal effects?! It does! Along with the fungal fighting properties, this mush can also boost your immunity.

With a lower water content in the mushroom, the pioppino can last a bit longer in the fridge. Great crisped up on salads with feta & micro greens. You can also use it for making your classic mushroom gravy or soup, yum!
