Pink Oyster

Also called the Pink Flamingo Oyster and you can see why! This mushroom is a brilliant pink with lovely scalloped edges.
Mushrooms have a completely different flavor once cooked. For instance, the pink oyster has a sour flavor when raw, but cooked, its umami and bacon-y, some taste more of a seafood flavor. Along with flavor change is texture change. Pinks have a rubbery texture when they are raw, but softens and becomes more akin to seafood once cooked. This is a couple of the reasons we recommend cooking mushrooms before eating them.
We typically grow this mushroom only in the warmer months as it is a tropical variety, favoring tropical hardwood species to grow on. Packed full of protein and B vitamins, this mushroom is a lovely addition to your summer meal.
